Bratwurst à la pizzaiola

Ingredients for 2 servings:

  • 2 pieces of bratwurst
  • 6 beefsteak tomatoes
  • 1 garlic clove(s)
  • Salt
  • Sugar
  • 4 sprigs of basil
  • 30 g clarified butter
  • Flour

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Blanch the beefsteak tomatoes in boiling water, rinse with cold water, peel, remove the stems, and remove the seeds. Dice the tomatoes and melt in a pan, stirring frequently, and simmer until reduced. Crush the garlic, season with salt and sugar. Finely chop the basil and add to the tomato sauce. Heat the clarified butter in a pan, dust the sausages with flour, and fry in the hot fat, continuing to cook over low heat for about 5 minutes on each side. Then garnish with the tomato sauce. Serve with fresh, baked, crusty baguette.
