Filled coconut cookies à la Knuppelchen

Ingredients for 1 servings:

  • 125 g butter
  • 80 g powdered sugar
  • 175 g flour
  • 1 tbsp cocoa powder
  • 1 jar jam, fruity-exotic
  • 150 g white chocolate coating
  • 50 g butter
  • 100 g desiccated coconut
  • 1 tbsp liqueur (coconut)

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

for 20 pieces

Make a shortcrust pastry from butter, sugar, flour, and cocoa. Chill for one hour. Then roll out and cut out cookies/circles. Bake at 175°C for approximately 15-20 minutes. Once cooled, spread jam on half of the cookies. Melt the chocolate coating and butter and add the coconut flakes and coconut liqueur (optional). Then spread it on the other half of the cookies and fold it together with a jam biscuit.
