Ingredients for 1 servings:

  • 225 g flour
  • 2 tsp baking powder
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 100 g butter, soft
  • 1 egg(s)
  • 50 g butter
  • 100 g honey
  • 40 g raisins
  • 10 g rum
  • 280 g apples
  • 100 g ground almonds
  • 1 lemon(s)
  • e.g. cinnamon

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

For the dough, knead all the ingredients together well, shape into a ball, wrap in cling film, and refrigerate for about 30 minutes. In the meantime, mix the raisins with the rum. Peel and core the apples, then coarsely grate them, then mix well with the juice of half a lemon. Roll out the dough on a baking sheet and bake in a preheated oven at 160°C (fan oven) for about 10 minutes. In the meantime, heat the butter with the honey until melted, then stir in the raisins, almonds, cinnamon, and grated apple and let everything simmer for a few minutes. Remove the dough from the oven and immediately spread with the apple mixture. Bake at 160°C (fan oven) for another 15 to 20 minutes, until the topping has turned a nice brown color. While still warm, cut into rectangles or triangles and let cool; the topping will then firm up. Tip: If you like, you can use dried cranberries instead of raisins.
