Ingredients for 1 servings:
- ¼ liter of milk
- 70 g butter
- 150 g flour
- 3 eggs
- 2 egg yolks
- 50 g cheese, grated
- 50 g ham, diced
- Basil, fresh
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
First, bring the milk and butter to a boil. Stir in the flour until a nice batter forms. Be careful not to create any lumps. Knead the batter until it’s nice and hot, but it shouldn’t brown. Add one egg at a time (it’s best to remove the pan from the heat) until it’s nice and fluffy. Add the chopped basil, cheese, and diced ham, and season with salt and pepper. Twist the mixture into dumplings and place them on a greased baking sheet. (If you’re in a hurry, simply pipe them out using a wide nozzle. Be careful – they should be slightly spaced apart because the choux pastry will expand a little.) Bake the whole thing in the oven at around 180°C until golden brown on all sides. Can be served hot or cold!
