Ingredients for 4 servings:
- 1 tbsp butter
- 1 onion(s), finely chopped
- 1 can salsify(s), approx. 400 g
- 3 dl vegetable broth, strong
- 2 dl apple wine or white wine
- 1 ½ dl liquid (black salsify broth from the can)
- 1 dl cream (half cream), whipped until fluffy
- n. B. salt and pepper, pepper
- n. B. Apple peel, red, in thin strips (decoration)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
simple and quick – but delicious!
Melt the butter. Add the onion and sauté. Drain the salsify, reserving the liquid. Add the salsify to the onions and sauté. Pour in the broth, apple cider, and 1.5 dl of the reserved salsify liquid, and bring to a boil. Cover and simmer for about 10 minutes. Then puree and strain through a sieve. Heat until hot, then stir in the fluffy cream and season with salt and pepper. Garnish with thin strips of red apple peel, if desired.
