Parmesan soup

Ingredients for 5 servings:

  • 200 g potatoes
  • 1 onion(s)
  • 1 liter vegetable broth
  • 150 g Parmesan cheese
  • 150 g crème fraîche
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and wash the potatoes. Peel the onion. Dice the potatoes and onion. Bring the broth to a boil and simmer the diced vegetables for about 20 minutes over low heat with the lid closed. Meanwhile, grate the cheese. Then purée the soup. Whisk in the grated cheese and crème fraîche. Heat the soup again briefly and season with salt and pepper. I always serve it with fresh baguette.
