Cheap and quick tomato soup with rice

Ingredients for 3 servings:

  • 100 g rice (long grain rice)
  • 500 ml boiling water, lightly salted
  • 2 m.-sized onion(s)
  • 1 garlic clove(s)
  • 1 tbsp olive oil
  • 2 packs of tomatoes, pureed (500 g each)
  • 250 ml vegetable stock
  • 1 tsp oregano, shredded
  • 70 g tomato paste
  • Salt and pepper, freshly ground
  • Paprika powder, sweet
  • Cayenne pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

The little ones also enjoy it very much!

Add the rice to the boiling salted water, bring to a boil, and let it swell for about 15 minutes. Transfer to a sieve and rinse with cold water. Peel and dice the onion and garlic clove, and fry in the heated oil. Add the passata, vegetable stock, and oregano, bring to a boil, and simmer for about 10 minutes. Add the tomato paste and cooked rice, bring the soup back to a boil, season with salt, pepper, paprika, and cayenne pepper, and serve sprinkled with parsley. Tip: It also tastes delicious with meatballs!
