Pasta sauce with dried tomatoes and onions

Ingredients for 2 servings:

  • 1 jar dried tomatoes in oil
  • 3 onions, red
  • 1 clove(s) garlic, squeezed
  • 1 pack of tomatoes, pureed or chopped
  • 2 tbsp herbs de Provence
  • 1 tsp, heaped salt
  • 1 tsp, heaped pepper
  • 1 pinch(s) of sugar

Working time approx. 15 minutes; Total time approx. 15 minutes

classic tomato sauce, without any packets

Drain the sun-dried tomatoes, reserving the oil and chop them finely. Dice the onions fairly well. Use the oil from the sun-dried tomatoes to sauté the onions in a casserole dish with salt and pepper. Crush the garlic cloves and add them. Add the sun-dried tomatoes. Sauté briefly, then add the packet of passata. Stir in the herbs de Provence and sugar, and season with salt and pepper. Simmer gently for 20 minutes. This goes best with homemade fresh pasta and freshly grated Parmesan cheese. It’s also perfect for all kinds of pasta bakes. Tip: If the oil from the sun-dried tomatoes isn’t enough, simply add more olive oil.
