Sauce of Pomodori with fagiolini

Ingredients for 4 servings:

  • 300 g tomatoes
  • 250 g beans, green
  • 2 tbsp tomato paste
  • 125 ml vegetable stock
  • 2 onions
  • 2 garlic cloves
  • 4 tbsp olive oil
  • 1 tsp thyme, shredded
  • 1 tsp oregano, shredded
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Trim the ends of the beans, discard the strings if necessary, wash, drain, and cut into pieces about 3 cm long. Finely dice the onions and garlic. Quarter the tomatoes and cut out the stem ends. Cut the tomatoes into small pieces. Heat the olive oil in a pan and sauté the diced onions and garlic. Add the tomato paste and stir. Add the tomato pieces and beans to the pan, add the vegetable stock, and simmer uncovered over low heat for about 15 minutes, stirring occasionally. Season the bean and tomato sauce with thyme, oregano, salt, and pepper, and serve. Any kind of pasta goes well with it.
