Broccoli soup with bacon

Ingredients for 4 servings:

  • 1 onion(s), chopped
  • 4 slice(s) bacon, diced
  • 400 g potatoes, diced
  • 1 liter chicken broth, fresh or canned
  • 400 g broccoli, finely chopped
  • salt and pepper
  • 2 tbsp mint, to taste
  • possibly crème fraîche or sour cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onion and bacon for 5 minutes, remove from the pan, and set aside. Peel and dice the potatoes, then cook in the broth. Add the broccoli and simmer for 10 minutes. Puree with a hand blender. Season the soup with salt, pepper, and mint, if desired, and pour into a deep bowl. Before serving, top with the onion and bacon mixture and, if desired, a dollop of sour cream or crème fraîche. The soup freezes perfectly in freezer containers.
