Ingredients for 4 servings:
- Mashed potatoes (leftover from the day before)
- 2 carrots
- 1 leek(s) or alternatively an onion
- 150 g bacon
- Oil for frying
- 1 liter of broth
- 1 ball of mozzarella or a piece of Gouda (approx. 125 g)
- salt and pepper
- oregano
- basil
- Leftover roast or cooked meat or sausages
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
from leftover mashed potatoes
Fry the peeled, diced carrots, the sliced bacon, and the finely chopped leeks or onions in a pan in oil until translucent. Pour in the broth and heat through. Add the mashed potatoes and the finely chopped cheese, stirring until the cheese and mashed potatoes have dissolved. Season to taste and add any chopped roast meat or sausages you like.
