Spicy pumpkin stew

Ingredients for 4 servings:

  • 500 g pumpkin flesh
  • 500 g potatoes
  • 150 g bacon (breakfast bacon)
  • 2 tbsp oil
  • 3 stalk(s) leeks
  • 500 ml meat broth (instant)
  • salt and pepper
  • 2 tbsp vinegar (white wine vinegar)
  • 2 tbsp double cream
  • 1 tsp sugar
  • 200 g meat sausage
  • 1 tbsp parsley (chopped, fresh or frozen)
  • 2 onions

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pumpkin into small cubes. Peel and dice the potatoes. Cut the bacon into strips, peel and chop the onions. Sauté the bacon and onions in a pan with oil until translucent. Slice the white part of the leek into rings and add to the bacon along with the pumpkin and potatoes. Pour in the meat broth. Simmer for 30 minutes. Season with salt, pepper, vinegar, double cream, and sugar. Peel the sausage, cut into strips, and add. Bring the stew to a boil briefly and sprinkle with parsley.
