Instead of strawberries, you can also use other berries, such as blackberries, elderberries, or currants. Plums or damsons can also be used. The sugar may then need to be adjusted. I find that with strawberries, for example, you can safely use frozen fruit. It’s less work and there’s no waste. Since the fruit cooks down anyway, I can put it straight from the bag into the pot. Boil the fruit with around 1 to 1.5 liters of water (this depends on the juice content of the fruit). Let it simmer for around 10 minutes. Then press the whole thing through a sieve (if you don’t like the seeds) or puree it with a hand blender. Then boil the juice, sugar, and vanilla sugar for another 10 minutes. Remove from the heat, add the rum, and stir with a wooden spoon to distribute the rum. Then fill the whole thing into thick-walled glass bottles while it’s still as hot as possible. This works, for example, in a glass bottle. For example, you can use reusable sparkling water bottles, or you can buy (or have) other attractive bottles. Please replace the aluminum cap with a plastic one from a Coke bottle (any other soda will do, of course). The alcohol and the hot bottling ensure that the liqueur keeps for a very long time. It also goes well with vanilla ice cream or pudding. It’s also delicious warm, but it can quickly go to your head.
