Ingredients for 3 servings:

  • 600 g mushrooms, fresh or frozen
  • 600 g potatoes
  • 150 g carrot(s)
  • 150 g onion(s)
  • 2 bay leaves
  • 1 piece(s) parsley root(s)
  • salt and pepper
  • Fresh herbs to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the onions, grate the carrots, and dice the potatoes into small cubes. Cut larger mushrooms into smaller pieces. Bring 1.5 liters of water to a boil and add the mushrooms, potatoes, carrots, and onions. Season with salt and pepper. Add the bay leaves and parsley root. Simmer the soup for 20-30 minutes, until the potatoes are tender. Before serving, remove the bay leaves and parsley root, season the soup to taste, and sprinkle with chopped herbs to taste.
