párolt sertéshús pocak – from my mother-in-law from Hungary (home recipe)
Cut a cross into the pork belly rind. Season the pork belly on all sides with salt, pepper, and paprika. Peel and dice the onion and garlic. Heat the margarine in a large (5-6 l) pot. Briefly sear the meat on all sides and, just before the end of the searing, add the onions and garlic until golden brown. Add the water and cover the pot. Simmer over low heat for 30-40 minutes. Turn the meat occasionally and add more water if necessary. When the meat is cooked, slice it and serve with something like steamed potatoes and braised white cabbage (see my recipes).
