Ingredients for 1 servings:

  • 450 g corn, coarsely ground
  • 1 bag of baking powder
  • 1 tsp salt
  • 1 tsp sugar
  • 450 g cheese, goat cheese, coarsely grated
  • 650 ml mineral water, 600 -700 ml carbonated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

gluten-free, egg-free, cow’s milk-free

30 cm loaf pan lined with baking paper. Mix the dry ingredients, add the grated cheese, mix well, and then add the water. It should be like a sponge cake batter; a little more is better, as it will rise better. Stir for about 3-5 minutes. Pour into a 30 cm baking pan lined with baking paper, shake to ensure the batter is evenly distributed. Place in a cold oven and bake at approximately 130°C for about 60-70 minutes. Use a needle test. Remove the pan after about 20-30 minutes or more, but only after the baking paper has cooled. P.S.: Using baking powder, the bread stays fresh and keeps longer than using yeast, at least with gluten-free grains. My own recipe.
