Ingredients for 1 servings:

  • 250 g flour
  • 100 g powdered sugar, sifted
  • 200 g butter, cold
  • 2 eggs, only the yolk
  • 1 tbsp vanilla sugar
  • 2 apples
  • 30 g raisins, possibly soaked in rum
  • Cinnamon
  • 1 egg yolk, for brushing
  • Almonds, chopped
  • lemon juice

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Quickly knead the first 5 ingredients into a dough with cold hands and chill. Preheat oven to 160°C (325°F). Please note that ovens heat differently. Filling: Cut peeled apples into very small pieces, mix with cinnamon, lemon juice, raisins (chop these finely if desired), and the finely chopped almonds. Roll out the cookie dough. It’s a good idea to divide the dough into several portions and chill again. Cut out discs about 5cm in diameter, place them on a baking sheet lined with baking foil or similar, and fill them with the apple mixture. Cut out more discs, either slightly larger than the first ones or roll over them briefly to enlarge them. Lightly moisten the edge of the bottom disc with water and place the larger disc on top, pressing the edge down firmly. (It works better with cold hands.) Finally, brush with beaten egg yolk. Bake at 160°C (325°F) for about 25-30 minutes until golden brown. They taste best when fresh, but also the next day.
