Mozzarella rolls

Ingredients for 8 servings:

  • 500 g flour
  • 1 sachet of baking powder
  • 1 tsp salt
  • 300 g Greek yogurt
  • 200 g mozzarella, grated
  • some water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

First, combine the flour, salt, and baking powder. Add the yogurt and cheese and knead in a food processor. This takes a few minutes. If the dough remains too dry, add more water. The dough should be slightly sticky. Then form the rolls. I use two tablespoons to place small heaps on a baking sheet and then shape them with wet hands. Then bake at 200°C (top/bottom heat) for about 20-25 minutes. A crust will form on the outside, but they will feel very soft when hot. This dough is enough for about 8 regular-sized rolls, but you can also make lots of small party rolls, which will reduce the baking time slightly. Tip: Many other cheeses are suitable instead of mozzarella, such as Gouda or Emmental. You can also add some chopped sun-dried tomatoes, herbs, fried onions, olives, etc.
