Ingredients for 1 servings:
- 750 g wheat flour
- 450 g water, lukewarm start with 400 ml, add a little more if necessary
- 1 cube of yeast
- 1 ½ tsp salt, maybe a little more
- ½ tsp sugar
- 5 tbsp olive oil
- 250 g herb butter (1 roll)
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Make a yeast dough from the first 6 ingredients. This means putting flour in a bowl, crumbling the yeast into a well, adding the sugar to the yeast, and adding a little lukewarm water. Cover the well with flour and let stand for 5 minutes. Add the rest of the water and knead into a dough. Then let it rise in a warm place. I always use a baking bowl and place it in a sink filled with warm water. When the bowl rises, the dough is ready. If it hasn’t risen enough, let it double in size, knead briefly, and let rise again. Roll out the dough and spread with herb butter. Using a pizza wheel, cut the dough into strips and roll them up. Line the bottom of a springform pan with baking paper, brush the sides with butter, and sprinkle with breadcrumbs. Place the dough swirls next to each other, like a rose cake. Let it rise for another 10 minutes at 50 degrees Celsius using top and bottom heat, then bake for 30-40 minutes at 180 degrees Celsius. Best served warm!
