Pizza (dough) rolls

Ingredients for 6 servings:

  • 1 kg flour
  • 1 cube of yeast
  • 2 tbsp sugar
  • 600 ml water
  • 4 tbsp olive oil
  • 1 tbsp salt
  • Mixed herbs (sage, oregano, thyme)
  • 1 clove(s) garlic
  • Sea salt, coarse
  • Olive oil, for drizzling

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Put the flour in a bowl and make a well in the center. Crumble the yeast into it, mix it with the sugar and a little lukewarm water (about 100 ml), then dust with flour and let it rise for about 15 minutes. Add the oil, salt, and gradually add 1/2 liter of water. Knead well, cover, and let it rise until the dough has doubled in size. Knead again and let it rise again (this step is not necessary, but it makes the rolls extra light and fluffy). Divide the dough into equal parts, shape them into balls, flatten them slightly, and sprinkle with finely chopped herbs, garlic, and sea salt. Drizzle with oil and let it rise a little longer. Bake in a preheated oven at 200°C for about 25 minutes. The rolls are perfect as a starter with aioli or as a snack with wine or beer. They also freeze well.
