Hazelnut biscuit waffles à la Didi

Ingredients for 12 servings:

  • 10 m.-sized eggs
  • 10 tbsp water, hot
  • 1 sachet of lemon peel flavoring
  • 200 g sugar
  • 300 g flour
  • ½ pack of baking powder
  • 1 bottle of bitter almond flavor
  • 100 g hazelnuts, ground

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Crack the eggs and separate the egg yolks and egg whites. Whisk the egg whites until stiff peaks form and set aside. Heat the water and whisk together with the egg yolks, lemon zest flavoring, and sugar until frothy. Add the baking powder, sifted flour, hazelnuts, and bitter almond flavoring and continue beating with a hand mixer. Finally, fold in the beaten egg whites. Pour the batter onto the hot waffle iron. Add a little water to make it thinner, if necessary. After baking, sprinkle the waffles with powdered sugar and serve with whipped cream and fresh fruit.
