Ingredients for 4 servings:
- 500 g minced beef
- 1 onion(s), finely diced
- 2 tbsp oil
- 1 broccoli
- 1 garlic clove(s)
- 3 tbsp tomato paste
- 125 ml vegetable stock or chicken broth
- 200 ml sour cream, cremefine or cream
- salt and pepper
- little chili
- optionally diced tomatoes
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
for children, childminder-tested recipe, enough for 3 – 4 day-care children and a not too hungry childminder
Cut the broccoli into very small florets and cook in boiling salted water for about 3 minutes (test for doneness; it should be crisp but not too hard). Drain through a sieve. Fry the ground meat in hot oil until crumbly and brown, add the diced onion and sauté. Stir in the tomato paste and fry briefly. Pour in the broth and simmer for 10 minutes. Season to taste and season with sour cream. Heat again and stir in the cooked broccoli. Serve best with pasta. Tip: If you like, you can add diced tomatoes (uncooked and with skin) to the finished dish. This creates a beautiful color effect, cools the dish immediately, and has a special appeal for (my day-care) children due to its raw texture. A recipe that all of my day-care children “dig in” and each enjoys eating their broccoli.
