Ingredients for 1 servings:

  • 1 carrot(s)
  • 1 potato(s)
  • ½ onion(s)
  • ¾ liter vegetable broth or water
  • 3 tbsp sour cream
  • ½ pumpkin(s)
  • 2 tbsp butter or margarine
  • salt and pepper
  • herbs, fresh
  • Bread(s), diced, toasted
  • rosemary

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the pumpkin, carrot, potato, and onion. Sauté in butter, season with salt and pepper, add broth or water, and season. Cook over moderate heat until the vegetables are tender. Then puree or blend everything, season to taste, and add the cream. Place the bread cubes in a bowl, pour in the soup, and garnish with a little cream and freshly chopped herbs.
