Pork roulades with cabbage

Ingredients for 4 servings:

  • 600 g white cabbage
  • 40 g bacon, streaky, smoked
  • 1 tbsp lemon juice
  • 2 small apples, sour, pitted
  • 4 pork roulades, approx. 100g each
  • 2 tbsp cream cheese, with herbs
  • salt and pepper
  • 2 onions, diced
  • 2 tbsp oil
  • 200 ml tomato juice
  • 200 ml wine, white, dry
  • 200 ml cream
  • 1 tbsp clarified butter
  • Parsley, for garnishing

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut white cabbage into strips, bacon into cubes, and apples into wedges. Drizzle apple slices with lemon juice. Season roulades with salt and pepper and spread with cream cheese. Roll up and secure together. Heat oil and sear the roulades for about 5 minutes. Add diced onion, sauté, and deglaze with wine and tomato juice. Cover and simmer for about 15 minutes. Pour in cream and reduce slightly. Sauté bacon in a pan until translucent, add apple slices, and sauté briefly. Remove from the pan. Add clarified butter and sauté white cabbage for about 10 minutes. Add bacon and apple slices again. Season with salt and pepper. Serve vegetables and roulades and garnish with parsley. Serve with sauce separately. Rösti (fried potatoes) goes well with this.
