Spaghetti and bean salad à la Didi

Ingredients for 4 servings:

  • 250 g spaghetti, cooked, from the previous day
  • 200 g meat sausage, on a ring
  • 85 g green beans (drained weight)
  • 50 g tomato peppers
  • 3 m.-sized eggs
  • 50 g gherkins, small
  • 2 tsp herbs de Provence
  • e.g. salt and pepper
  • e.g. mayonnaise
  • n. B. Remoulade

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Boil the eggs hard. Peel the sausage and cut into small pieces. Dice the gherkins and tomato peppers. Place the sausage, gherkins, and peppers in a bowl. Drain the beans and add them. Cut the cooked spaghetti into small bite-sized pieces and stir them in. Cut two eggs into strips and stir in. Stir in the tartar sauce and mayonnaise, if desired. Season with salt, pepper, and Provençal herbs. Slice one egg and top the salad with it. Refrigerate for at least an hour before serving.
