Lentil and cereal side dish

Ingredients for 2 servings:

  • 50 g wheat
  • 50 g spelt
  • 50 g lentils, red
  • 1 stalk(s) leek
  • 20 g carrot greens
  • 1 liter vegetable broth
  • 1 tbsp rapeseed oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the leek and trim two-thirds of the green part. Halve the stalk lengthwise and cut into small half rings. Finely chop the carrot tops. Heat the oil in a saucepan and sauté the leek. Add the grains and lentils, cook for 2 minutes, then add the carrot tops. Pour in the broth, bring to a boil, and then simmer on low heat for 10 minutes. Season with salt and pepper. Strain the broth through a sieve.
