Ingredients for 4 servings:
- 300 g brown rice
- 1 red bell pepper(s)
- 1 can corn, naturally sweet
- 1 can chickpea and bean mix
- 1 can chili beans
- salt and pepper
- curry
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes
with rice – vegetarian
Cook the rice according to the package instructions. However, use curry powder instead of salt to create “curry rice.” Wash and chop the bell pepper. Drain the corn and the chickpea and bean mix. Add the bell pepper, corn, and bean mix to a pot and heat. Then deglaze with the chili beans (they have such a delicious sauce). Cook and stir until everything is nice and thick. Season with curry powder, salt, and pepper to taste. Mix in the rice, and you have a super healthy, delicious mixed meal!
