Banana-Walnut Cookies

Ingredients for 1 servings:

  • 125 g butter
  • 175 g sugar
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 200 g flour
  • 1 tsp baking powder
  • 100 g walnuts, chopped
  • 1 banana(s), ripe
  • 2 pinch(s) cinnamon

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Preheat oven (electric oven 175°C, fan oven 150°C). Line two baking sheets with baking paper. Beat butter, sugar, a pinch of salt, and vanilla sugar with the whisk of a mixer until creamy. Stir in egg. Stir in banana puree and cinnamon. Mix flour with baking powder, sift, and stir in. Fold in walnuts. Using a piping bag or tablespoon, place 10 mounds of dough on each baking sheet, leaving some space between them, and flatten slightly. Bake cookies one at a time in the hot oven on the middle rack for about 10 minutes, until the edges are golden yellow and the center is still slightly soft. Let cookies cool briefly on the baking sheet, then remove the paper from the baking sheet and let cool on a wire rack.
