Puff pastry parcels with berry filling

Ingredients for 18 servings:

  • 2 packs of puff pastry
  • 200 g strawberries, frozen or fresh
  • 200 g blueberries, frozen or fresh
  • 400 ml milk for the pudding
  • 1 packet of vanilla pudding powder or cream pudding powder
  • 100 g sugar

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

best with fresh fruit, perfect for Easter or just for in between

Cook the pudding according to the package instructions, using only 400 ml of milk. If using frozen berries, keep them warm beforehand. Let the pudding cool. Purée the berries and mix with 100 g of sugar. Add to the cold pudding and mix. Preheat the oven to 200 °C (top/bottom heat) and line a baking sheet with baking paper. Cut the puff pastry rolls into equal-sized pieces, spread the mixture on them, and fold them together. Tip: Place them seam-down on the baking sheet to prevent them from bursting. Bake in a preheated oven at 200 °C (depending on your oven’s temperature). Bake multiple sheets one after the other.
