Baked chicken drumsticks

Ingredients for 2 servings:

  • 4 chicken legs
  • 15 g butter
  • some olive oil
  • 4 small onions
  • 3 cloves garlic
  • 1 yellow chili pepper(s)
  • 2 can/n pizza tomatoes, 400 g each
  • 1 zucchini, round, but can also be long
  • 2 pointed peppers
  • 250 g mushrooms, brown
  • salt and pepper
  • 4 tsp paprika powder
  • 50 g Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Clean and slice the mushrooms. Halve the zucchini and cut into small half rings, slice the pointed peppers into rings, peel the onions and garlic and slice or ring them. Open the chili pepper, remove the seeds, cut into strips, and then chop finely. Preheat the oven to 200°C (top and bottom heat). Put the butter in small pieces and the olive oil into an ovenproof dish. Place the chicken thighs on top, seasoning with paprika, salt, and pepper if desired. Arrange the onions, garlic, chili, zucchini, pointed peppers, and mushrooms on top. Season the pizza tomatoes with salt and pepper and place them on top, sprinkled with a bit of Parmesan cheese. Bake in the oven for 60 minutes, covering with aluminum foil if necessary. Enjoy!
