Curry – Apple – Fish

Ingredients for 2 servings:

  • 300 g redfish fillet(s)
  • ½ lemon(s)
  • 2 onions
  • 2 apples, sour
  • 1 bunch of spring onions
  • 3 tbsp butter
  • 2 tsp flour
  • 3 tsp curry
  • 150 ml apple juice
  • 200 ml vegetable stock

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Drizzle the fish with lemon juice, season lightly with salt, and dice. Dice the onions. Slice the apples into rings. Cut the spring onions into approximately 4 cm long pieces. Heat butter in a pan. Add the onions and apples. Sauté briefly and remove. Keep warm. Heat 1 tablespoon of oil in the pan, dust the fish with flour, and place it in the pan. Fry for about 10 minutes. Sprinkle the curry over it and fry. Deglaze with apple juice and stock. Add the fruit and vegetables. Simmer for another 5 minutes. Season with salt.
