Ingredients for 4 servings:

  • 4 small chicken breast fillets, without skin
  • 2 leek(s)
  • 1 cup of cream (whipped cream)
  • 1 cup crème fraîche
  • 2 tbsp tomato paste
  • 1 tbsp curry powder
  • 150 g cheese, mild, grated
  • Salt
  • Pepper, white
  • 2 tbsp oil

Brown the chicken fillet in hot oil on both sides, depending on its thickness (if it seems too thick, cut it in half first), season with salt and pepper, and place in a baking dish. Sauté the trimmed, sliced ​​leek in the remaining oil and add it to the meat. Mix the whipped cream with the crème fraîche, tomato paste, curry powder, a little salt, and pepper, and pour over the chicken. Sprinkle with grated cheese (e.g., Gouda) and bake in a preheated oven at 155°C for about 15 minutes—the cheese should be melted but not browned. Serve with boiled potatoes or pasta, and of course, a salad.
