- Green salad with dressing

Salade aux chèvre chaud (Var. 1)
This recipe can be prepared in two ways. Here is version 1. First, the green salad – everyone should make it the way they like best. It’s better with herbs, though. If you can get goat cheese in a roll (about 3-5 cm in diameter), it’s easiest. Cut this roll into slices about 1.5-2 cm thick. If you can’t get goat cheese like this, cut it into pieces that are about 1.5-2 cm thick and have sides measuring about 4-5 cm. Cut three slices of baguette (about 2 cm thick) for each person. Toast the baguette slices on both sides in the oven. Then rub them with the peeled garlic clove. Spread the cheese on the slices of bread and bake in the oven for about 10 minutes. Divide the dressed salad between the plates and arrange the goat cheese on top.
