Breaded feta sticks with lamb's lettuce, arugula, brown mushrooms, shallots and mango strips

Ingredients for 2 servings:

  • 200 g feta cheese
  • 120 g lamb’s lettuce
  • 120 g arugula
  • 4 mushrooms, brown
  • 1 shallot(s)
  • 1 mango(s), fresh
  • 50 g breadcrumbs
  • 3 tbsp flour
  • 2 tsp paprika powder
  • 5 tbsp, heaped Parmesan, freshly grated
  • salt and pepper
  • 1 egg(s)
  • 2 tbsp water
  • 5 tbsp olive oil
  • 3 tsp lemon(s)

Working time approx. 30 minutes; Total time approx. 30 minutes

vegetarian and simple

Halve the feta cheese and then divide it into 6 pieces to make 12 sticks. Mix the flour with paprika, salt, and pepper, then mix the breadcrumbs with the Parmesan cheese. Beat the egg with 2 tablespoons of water. Coat the cheese sticks in the flour mixture, moisten with the egg mixture, and then coat in the breadcrumb mixture. Cut the mushrooms into small slices, as well as the shallot. Mix the lettuce with the mushrooms and shallot well. Mix the salad dressing with the olive oil, lemon juice, salt, and pepper, then pour over the salad and mix well. Heat a pan with a little olive oil and fry the feta sticks on all four sides. Peel the mango and cut into strips. Arrange the salad on plates, arrange 6 feta sticks on each one, and garnish with the mango pieces.
