Walnut cookies à la Marquise

Ingredients for 1 servings:

  • 3 egg whites
  • 340 g sugar
  • 260 g walnuts, grated
  • 190 g hazelnuts, grated
  • n. B. Walnuts, for garnish
  • 200 g powdered sugar
  • e.g. cherry brandy or lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with powdered sugar glaze – egg white utilization

Beat the egg whites until stiff, add the sugar and nuts, and knead everything into a firm dough. Roll out the dough to a 1 cm thickness and cut out any shapes you like. Place the cookies on a baking sheet lined with baking paper and let them dry overnight. Bake for about 12 minutes at 180 degrees Celsius. The edges should not be more than light brown, otherwise the cookies will be tough instead of moist. Cool slightly on a wire rack. Mix the powdered sugar and liquid together to make a thick glaze and frost the still-warm cookies. Garnish each with 1/4 walnut.
