Mascarpone cream with berries

Ingredients for 3 servings:

  • 250 g mascarpone
  • 250 g blueberries or blackberries, raspberries
  • 1 tbsp lemon juice
  • 4 tbsp sugar
  • 1 vanilla pod(s)
  • 200 g whipped cream

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Puree the berries with lemon juice and half the sugar. Combine the remaining sugar with the scraped vanilla seeds and the mascarpone. Whip the cream and fold in. Layer the cream and fruit purée alternately in glasses or bowls and refrigerate for at least 2 hours. Tip: The cream also freezes perfectly. If you need a sweet treat, you can slice it and serve it as a “faux” parfait.
