Ingredients for 4 servings:

  • 200 g pearl barley
  • 1 stalk(s) leek
  • 2 stalk(s) celery
  • 2 carrots
  • 2 potatoes
  • 1 bunch of parsley
  • 2 cloves garlic
  • 1 onion(s)
  • 2 liters of meat broth
  • 1 bay leaf
  • 100 g bacon, streaky
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and finely chop the onion and garlic. Clean the vegetables, slice the carrot, dice the potatoes, and strip the celery and leek. Cut the bacon into strips. Heat the oil in a saucepan, fry the bacon, add the vegetables (without the parsley) and sauté. Add the meat broth, pearl barley, and bay leaf. Bring everything to a boil briefly, reduce the heat, and simmer for 1 hour. Remove the bay leaf and season the soup with salt, pepper, and parsley.
