Ingredients for 4 servings:
- 2 pork fillets (225 g each)
- 1 tbsp mustard, medium hot
- 2 tbsp breadcrumbs
- 1 tbsp parsley, dried
- salt and pepper
- 3 tbsp oil
- 1 onion(s), finely chopped
- 400 ml vegetable stock
- 100 g cream
- Paprika powder

super tasty and super fast
Cut each fillet into approximately 6 medallions and flatten slightly. Mix together the mustard, breadcrumbs, and parsley, and season with spices. Heat oil in a pan. Fry the meat for approximately 2 minutes on each side. Remove from the pan and place on a baking sheet lined with baking paper. Spread the mustard and herb mixture on top and bake at 175 degrees Celsius (convection oven) for approximately 12 minutes. Sauté the onion in the remaining fat until translucent. Deglaze with stock and cream and reduce slightly. Thicken with a gravy thickener, if desired, and season with salt and pepper. Serve with mashed potatoes.
