Spicy semolina soup

Ingredients for 2 servings:

  • 1 large leek(s)
  • 4 tbsp durum wheat semolina
  • 1 ½ liters vegetable broth
  • some butter
  • Salt
  • pepper
  • nutmeg

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

with dumplings

Trim the leek, slice it into rings, and sauté it in a little butter. When the leek is translucent, add the semolina, sauté, and deglaze with vegetable stock. Let it simmer. Season the soup with salt and pepper to taste. Enjoy the soup on its own, with semolina dumplings, or meatballs.
