Tomato and onion soup according to grandma's recipe

Ingredients for 4 servings:

  • 4 large onions
  • 2 tbsp oil
  • 800 ml tomatoes, pureed
  • 800 ml vegetable stock
  • 100 g cheese, grated
  • salt and pepper
  • Sugar
  • some vinegar
  • n. B. Bread(s) or croutons for serving

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel the onions and slice them into rings. Heat the oil in a large pot and sauté the onions over medium heat, stirring occasionally, until softened and lightly browned. Add the passata and vegetable stock and bring to a boil. Season the soup with salt, pepper, sugar, and vinegar and simmer over low heat for about 15 minutes until slightly thickened. Sprinkle the cheese over the soup and serve with bread or croutons.
