Steamed Noodles with Vanilla Sauce
The perfect steamed noodles with vanilla sauce recipe with a picture and simple step-by-step instructions.
For the steamed noodle batter:
- 250 ml Lukewarm milk
- 80 g Sugar
- 1 bag Dry yeast
- 500 g Spelled flour 630
- 80 g Soft butter
- 1 pinch Salt
For the vanilla sauce:
- 1 liter Milk
- 1 piece Vanilla pod
- 2 slightly heaped tbsp Strength
- 3 -4 tbsp Sugar
- 50 g Butter
Also:
- Flour
- Plum jam / jam
- Milk
- Butter
- Sugar
- Cinnamon
Making dough:
- Only warm the milk very slightly. Mix with sugar and yeast until everything has dissolved.
- Add flour, butter and salt and knead a smooth dough. It should be very soft and elastic, but not sticky.
- Let the dough rise for at least 4 hours, covered.
The vanilla sauce:
- Remove some of the milk and set aside. Put the majority in a large saucepan and heat.
- Cut the vanilla pod lengthways and scrape out the pulp. Add the pulp and pod to the milk.
- Mix the removed milk with the starch.
- When the milk is boiling, turn the heat down and stir in the sugar and mixed starch. Simmer for 2 minutes while stirring.
- At the end add the butter and let it melt, mix well.
- If the vanilla is too weak for you, you can add a little more vanilla paste ö ä.
- Set the sauce aside.
Preparation of the steamed noodles:
- Put the dough together (do not knead any more) and divide into 8 portions.
- These look round and place them on a large floured board with a gap between them.
- If you like it, you can also fill the steamed noodles with plum jam or jam, maybe with chocolate cream. To do this, shape the dough into a disc between your fingers, put some of the desired filling in the middle and close the edges well. Then place the ball on the seam.
- Cover the prepared dough balls. That works quite well with a deep sheet. Let go until they have enlarged significantly.
- Now put about 150 ml milk and 1 tbsp butter in a wide, high pan and add 1 tbsp sugar. Now heat the whole thing.
- When the milk is boiling, reduce the heat and add 2-4 steamed noodles, depending on the pan size. It is better not to make too many balls of dough at once as they will still rise well. Put the lid on the pan. If you don’t have a lid, you can put a second pan over it upside down. .. IMPORTANT: There should be room for the steamed noodles at the top.
- Cook the steamed noodles for about 15-20 minutes on a low flame.
- Use a spatula to lift the steamed noodles out of the pan (they may hang a little) and place on a plate. Fill up the liquid in the pan and cook the next steamed noodles. You can also fill and cook several pans at the same time.
- Serve with vanilla sauce and sprinkle with some cinnamon if necessary.
- The recipe results in 8 steamed noodles, which are sufficient as a main course for 4 people. As a dessert you can delight 8 people with it.
- Of course, you can also veganize the recipe with margarine and almond milk, for example.
