Ingredients for 4 servings:
- 1 vegetable onion(s)
- 1 red bell pepper(s)
- e.g. oil, for frying
- 3 tsp curry powder
- 400 ml coconut milk
- 1 can lychee(s)
- e.g. parsley, for garnishing
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Dice the onion and bell pepper. Heat oil in a pan and sauté the onion. Add the curry powder and stir well. Deglaze with the lychee juice and add the coconut milk. Simmer gently for about five minutes and then add the bell pepper. Simmer for another 10 minutes. Before serving, add the lychees and garnish with flat-leaf parsley. Serve with fresh bread or rice.
