Spinach strudel

Ingredients for 2 servings:

  • 250 g leaf spinach (frozen)
  • 75 g feta cheese, diced
  • 1 small onion(s)
  • 1 clove(s) garlic
  • some nutmeg
  • some cayenne pepper
  • some salt and pepper
  • 5 cocktail tomatoes, halved
  • 1 pack of puff pastry from the refrigerated section
  • 2 tbsp oil
  • 1 egg yolk

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 45 minutes

with fruity tomatoes and spicy feta cheese

First, preheat the oven to approximately 180°C. Finely chop the onions and garlic and sauté in oil until translucent. Add the spinach and sauté with the lid closed until softened. Place the spinach mixture in a sieve, drain well, and squeeze dry liquid. Then finely chop the spinach. Return the spinach to the pan or pot and add the halved cherry tomatoes and diced feta cheese. Season with nutmeg, cayenne pepper, salt, and pepper, and sauté for another 3 minutes with the lid closed. Spread the spinach mixture onto the rolled-out puff pastry and roll it up into a strudel. Brush with egg yolk and bake the strudel at approximately 180°C for 30 minutes.
