Spaghetti with balsamic onions

Ingredients for 1 servings:

  • 100g spaghetti
  • 200 g onion(s), red
  • n. B. Pepper, red
  • 50 g chorizo, in a ring
  • 5 g brown sugar
  • ½ tbsp balsamic vinegar
  • ½ tbsp soy sauce
  • 150 ml red wine, dry
  • 10 g butter
  • n. B. Salt and pepper, from the mill
  • n. B. Chives for sprinkling
  • 1 tsp olive oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the spaghetti according to the instructions. In the meantime, peel the onions, halve them, and slice them into strips. Slice the peppers into thin rings. Finely dice the chorizo. Sauté all three ingredients in olive oil until hot, then sprinkle with the sugar and stir until caramelized. Deglaze the onion mixture with the balsamic vinegar, soy sauce, and red wine. Cook over medium heat for about 2-3 minutes, then reduce. Melt the butter and season the sauce with salt and pepper. Drain the spaghetti, add it to the pan with the onion mixture, and toss to combine. Transfer the dish to a plate and sprinkle with chives.
