Avocado Egg Packet

The perfect avocado egg packet recipe with a picture and simple step-by-step instructions.

  • 4 Eggs
  • 2 Ripe avocados
  • Salt and pepper
  • 8 Discs Bacon slices
  • 2 tbsp Butter
  • 4 Discs Wholemeal toast bread
  • 4 tsp Butter
  1. Cook the eggs in plenty of boiling water for 4-5 minutes, quench and peel them.
  2. Halve the avocados, remove the seeds. Remove the whole pulp with a spoon, season with salt and pepper. Place 1 egg in each half of the avocado and wrap 2 slices of bacon.
  3. Heat 2 tablespoons butter in a pan and fry the avocado and egg packets all over until crispy. 4 toast slices of toast, brush with a teaspoon of butter each and cut into triangles. Arrange the avocado egg packets with toast on plates and serve.
