Tomato salad with lime vinaigrette

Ingredients for 4 servings:

  • 1 kg tomato(s), aromatic, several varieties
  • 1 lime(s) (juice)
  • 2 garlic cloves
  • 1 tsp sugar
  • salt and pepper
  • 5 tbsp olive oil
  • 2 shallots, finely diced
  • 4 tbsp chives, in rolls

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Total time approx. 30 minutes

goes well with grilled fish

Roughly dice the tomatoes. Mix the remaining ingredients into a marinade and pour it over the tomatoes. Let it marinate for about 15 minutes and serve with grilled fish. It also tastes great with chicken.
