Farmer’s Fries or Boerenpatat
The perfect farmer’s fries or boerenpatat recipe with a picture and simple step-by-step instructions.
- 300 g Patat
- 250 g Bacon jullien
- 250 g Mushrooms
- 1 Pc. Fresh onion
- 1 Pc. Peppers yellow red orange
- 0,5 Pc. Fresh leek
- 2 tbsp Sunflower oil
- 10 g Butter
- Black pepper from the mill
- Chilli red, roughly chopped
- Freshly grated nutmeg
- Salt
- Dip
- 4 tbsp Yogurt turkish
- 1 tbsp Mayonnaise
- 0,5 tsp Sugar
- 0,5 tsp Curry
- 0,5 tsp Vegetable bouillon cubes
- 1 Pc. Clove of garlic
- 3 Pc. Baking paper for the decoration
- Before I start the actual dish, I turn to the dip, which needs time to draw, this is guaranteed in the time when I am busy cooking the actual dish. I take all the ingredients for the dip & put them in a bowl where I mix them together. you can taste it right away, but it is better to do it after an hour, as everything has then combined well. Then I can decide whether I have to add more curry or salt.
- Clean the mushrooms and cut into slices. Halve the leek, cut into slices so that the end result is strips. Put this in a sieve and rinse under running water, then allow to drain. Wash the peppers, remove the insides, halve and also cut into strips. !!! With me they were already cut and stored in the freezer as well as the leeks! Peel and dice the onion, whether large or small, that is agony for the farmer and the farmer’s choice. That means everyone has to know and decide for themselves.
- Time to preheat / heat up the oven: 220 degrees top & bottom heat. WHY the stove? Because I chose Ofenpatat.
- I need 2 pans, one for the leek and bell pepper, the other for the bacon and onion. I prepare the leek and paprika as well as a small piece of butter on a low flame, nice and slowly. I bake the bacon in a separate pan, when it is golden brown I take it out and fry the diced onions in the same pan. The mushrooms are also fried in this pan, with a small piece of butter. I do that to bring in the aroma of roast fat in the bacon, nothing has to be lost.
- In the meantime, the oven has reached the set temperature & I can spread the patat on a baking sheet lined with baking paper and bake it. Baking time is about 25 minutes but it can vary, just as the farmer thinks 😉
- If the vegetables are in the desired consistency, as is the bacon as well as the onions, I put everything together in the larger pan of the two. Then pour it through briefly and carefully, only then do I season everything with pepper, paprika and chilli from the mill, not forgetting the nutmeg. Salt is not necessary as this is brought in through the bacon.
- Now it is time to serve because the vegetable mix and the patat are ready and can be served. Since I wanted to design everything a little differently, in keeping with the title, I already thought about it the day before. I decided to make a paper plate and a paper bowl to present & serve. - IT COULD BE HtbspPFUL TO KNOW THE FOLLOWING: Boerenpatat = Farmer’s Fries Patat = French Fries = Fries …… Why Ofenpatat? I have problems with fried foods, so I opted for patat that is cooked in the oven. I think they taste delicious even without all that fat soaked up. As always, that is a question of taste and whether you are open to an alternative.
