Ingredients for 3 servings:
- 1 bunch of basil
- 30 g Parmesan, freshly grated
- 1 clove(s) garlic
- 1 tbsp milk
- 100 g cottage cheese
- 1 tbsp vegetable stock
- some lemon juice
- Herb salt and pepper, black
- 1 small red pepper, finely diced
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
light pesto variant without oil
Blend cottage cheese, milk, garlic clove, basil, and vegetable broth in a blender until smooth. Fold in the freshly grated Parmesan cheese and diced pepperoni. Season the pesto with salt, pepper, and a squeeze of lemon juice.
