Ingredients for 1 servings:
- 250 g margarine
- 4 eggs
- 150 g sugar
- 50 g chocolate shavings
- 375 g flour
- 2 tbsp cocoa
- ¼ tsp cinnamon
- 2 ½ tsp baking powder
- 1 tbsp rum
- 600 g sour cream
- 500 g quark
- 1 packet of pudding powder (vanilla flavor)
- 110 g sugar
- 1 jar sour cherries
- 1 ½ packets of pudding powder (vanilla flavor)
- 40 g sugar
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Beat the margarine and sugar until fluffy, then beat in the eggs one at a time. Add the rum and chocolate shavings. Sift together the flour, cinnamon, baking powder, and cocoa, then stir into the foam. For the sour cream, combine the sour cream, quark, vanilla pudding powder, and sugar and set aside. For the cherry filling, strain the cherries, reserving the cherry juice. Mix 60 ml of the cherry juice with the vanilla pudding powder and sugar. Bring the remaining cherry juice to a boil, stir in the 60 ml of cherry juice, and then add the sour cherries. Let the cherry filling cool. Spread half of the batter onto a baking sheet and spread the sour cream on top. Then place the cherries on top of the sour cream. Spread the second half of the batter over the cherries or pipe a lattice pattern using a piping bag. Bake the cake at 175°C (top/bottom heat) for approximately 35–40 minutes.
