Light and airy apple and cinnamon muffins

Ingredients for 1 servings:

  • 120 g whole wheat flour
  • 140 g wheat flour type 405
  • 2 tbsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tbsp cinnamon
  • 1 bag of vanilla sugar
  • 2 eggs
  • 85 g brown sugar
  • 125 ml sunflower oil
  • 125 g applesauce
  • 250 g apples

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 180 degrees Celsius. Sift the flour into a bowl and carefully mix with the baking powder, baking soda, salt, cinnamon, and vanilla sugar. In a second bowl, beat the eggs with sugar and oil. Peel and core the apples and cut them into small pieces. To prevent them from browning, drizzle with a little lemon juice if desired. Season to taste with sugar and cinnamon. Mix the apple pieces with applesauce and add to the egg mixture. Stir briefly. Finally, add the flour mixture and stir gently. Fill muffin or paper baking cups with the batter up to 2/3 full and bake in the middle rack of the oven for 20-25 minutes. Remove the muffins from the oven and let them rest in the pan for another 5 minutes. Remove from the pan and let cool on a wire rack.
